5 Non-Sandwich Sandwiches for Your Lunchbox

Now that school is back in session it’s back to the lunch-making grind.  Even if you wanted to, your school probably wouldn’t let you send the kids to school with the same old PB&J every day.  So be inspired with these no-bread sandwiches.

Rice Cake Sammy
Brooks invented this sandwich and makes them all the time. You can get really creative, but today we’re keeping it simple. These are great because rice cakes don’t get soggy.

  • Mayo
  • Turkey

Pancake Taco
We always have a big stack of pancakes leftover because I make a huge batch over the weekend, and this is a great way to get some extra use out of them.

Apple Cookie
These also make great after-school snacks!

  • Sliced apples
  • Almond butter (sunflower is great alternative to nut-free schools)
  • Craisins

Pinwheel Roll-Ups
Brooks learned this recipe at a cooking class this summer!

  • Whipped cream cheese
  • Tortilla

  • Bell peppers

Italian Roll Up
These are like Italian subs, but involve no bread!

  • Provolone Cheese
  • Salami
  • Lettuce
