Rice Cake Sammy
Brooks invented this sandwich and makes them all the time. You can get really creative, but today we’re keeping it simple. These are great because rice cakes don’t get soggy.

We always have a big stack of pancakes leftover because I make a huge batch over the weekend, and this is a great way to get some extra use out of them.
