Homemade Fudgesicles

I remember loving fudgesicles growing up.  The texture was always perfect and they were such a fun treat.  I’ve added a couple healthy twists but these homemade fudgesicles taste like the legit original.

  • ¼ cup chocolate chips
  • ⅓  cup granulated sugar
  • 1 TBSP cornstarch
  • 2 TBSP cocoa powder
  • ¾ cup whole milk
  • ¼ cup almond milk
  • Pinch of salt
  • 1 tsp vanilla extract
  • 1 tsp coconut oil

  1. Put chocolate, milk, cocoa powder, cornstarch, sugar, and salt in a saucepan.
  2. Bring to a simmer while whisking. Continue to whisk for 2-3 minutes until mixture thickens.
  3. Add vanilla and coconut oil and whisk until incorporated.
  4. Pour into popsicle molds and freeze for at least 4 hours.
