Popping Boba (Fruit Caviar)

If you’ve never had Popping Boba before (also known as fruit caviar), you’re missing out! It’s the tastiest kind of science experiment. We loved making these delicious balls of pearly deliciousness, which you can add to drinks, shaved ice, frozen yogurt… or, if you’re Avery, just eat as-is. Links and recipe below.

Syrup Solution

1/2 cup flavored syrup (or juice with no calcium or citric acid)
1/2 cup water
1/4 tsp sodium alginate

Calcium Lactate Bath
2 cups water
2 tsp calcium lactate (we also experimented with 1 tsp and it worked well!)
