I grew up eating pasta almost every night for dinner. Give me all the carbs. This avocado pasta is full of flavor and nutrition and it’s one my entire family will happily eat.
INGREDIENTS
- ½ lb of pasta
- 1 avocado
- ½ cup spinach
- ¼ cup basil
- 1 TBSP olive oil
- 1 clove garlic
- ½ cup reserved pasta liquid
- 2 TBSP slivered almonds
- pinch of salt
DIRECTIONS
- Start cooking pasta and reserve ½ cup of pasta liquid.
- In a blender, blend avocado, spinach, basil, almonds, garlic and salt until very smooth.
- When pasta is cooked, mix in sauce. Thin with pasta liquid, as needed to create desired consistency.
