Kid-Friendly Peanut Noodles Kid-Friendly Peanut Noodles

Dinner in under 8 minutes! Creamy, sesame peanut noodles for the whole family.  This is one of those recipes that you’ll keep coming back to because it’s hearty yet fresh.

INGREDIENTS (double recipe for a family of 4)

  • 8 oz pasta
  • 2 TBSP soy sauce, low sodium
  • 1 TBSP rice vinegar
  • 1 ½  tsp sesame oil
  • 1 ½  TBSP peanut butter
  • 2 tsp honey
  • ½ tsp grated ginger
  • 1 clove garlic
  • red bell pepper
  • Carrot
  • Peas
  • Chicken

DIRECTIONS

1.  Cook pasta and while the pasta cooks whisk together garlic, ginger, rice wine vinegar, soy sauce, sesame oil, honey and peanut butter.
2.  When pasta is cooked, reserved 1/4 cup cooking liquid.  Toss together pasta and sauce, adding cooking liquid if noodles are too sticky.
3.  Add veggies and chicken as desired.
