Rainbow Salad

Some kids love salad, others not so much.  But what kid doesn’t like a good rainbow?  You can mix up the ingredients to include fruits and veggies your kids like.  It’s all about getting that vibrant variation in your rainbow.


  • 2 cups baby kale
  • ½  cup cubed watermelon
  • ½  cup orange peppers slices
  • ½  cup yellow cherry tomatoes
  • ½  cup blueberries
  • ¼  cup sliced red cabbage
  • 1-2 TBSP olive oil
  • 3 tsp red wine vinegar

1. Toss ingredients together and dress before serving.
