We go through a lot of balsamic vinaigrette in our house, but sometimes it’s nice to mix up your usual salad dressing. This one is full of green and it’s super creamy. Toss it into a salad or dip some veggies in for a change from your kid’s usual ranch.
- ¼ cup low-fat greek yogurt
- 2 TBSP mayonnaise
- 1 TBSP tarragon vinegar (sub with red wine vinegar)
- 1 green onion, green part only
- 1 TBSP chives
- 1 TBSP parsley
- Place all ingredients in food processor, starting with wet ingredients. Process until herbs are finely chopped and dressing is green.
