Roasted Brussel Sprouts to Convert the Doubters

When I was 12, I made my mom promise she would never tell my friends who much I loved roasted brussel sprouts.  I knew kids were supposed to hate them, but dang, roasted with a little maple syrup, there is nothing better (in the veggie world, at least).  So, now I shout my love of brussel sprouts from the roof top.  “Brussel sprouts, I love you!”

INGREDIENTS

  • 1 lb brussel sprouts
  • 1-2 TBSP olive oil
  • salt and pepper
  • 1 TBSP maple syrup

DIRECTIONS

  1. Preheat oven to 450°. Trim ends of brussel sprouts and cut in ½ or ¼ depending on the size of the brussel sprout.
  2. Drizzle with olive oil, salt, and pepper. Toss to coat.
  3. Roast for 10-20 minutes (tossing a few times throughout), until sprouts are browned.
  4. Remove from oven and toss with maple syrup.
