When I first had chia seed pudding, I thought it was a fad that wouldn’t last. But it turns out, when something is yummy and good for you, it’ll stick around for a while. Chia seeds are full of fiber and protein and this pudding makes for a great breakfast or snack.
INGREDIENTS
- 1½ cups unsweetened almond milk
- 6 TBSP chia seeds
- ½ tsp vanilla extract
- 1 TBSP honey
- ¼ – ½ tsp cinnamon
- roasted almonds and coconut, for topping (optional)
DIRECTIONS
- Mix all ingredients except toppings together in sealable jar. Whisk to ensure no clumps form.
- Refrigerate overnight. Stir and add more almond milk if mixture is too thick.
- Top and Serve!
