Chia Seed Pudding

When I first had chia seed pudding, I thought it was a fad that wouldn’t last. But it turns out, when something is yummy and good for you, it’ll stick around for a while.  Chia seeds are full of fiber and protein and this pudding makes for a great breakfast or snack.

INGREDIENTS

  • 1½  cups unsweetened almond milk
  • 6 TBSP chia seeds
  • ½  tsp vanilla extract
  • 1 TBSP honey
  • ¼ – ½  tsp cinnamon
  • roasted almonds and coconut, for topping (optional)

DIRECTIONS

  1. Mix all ingredients except toppings together in sealable jar.  Whisk to ensure no clumps form.
  2. Refrigerate overnight. Stir and add more almond milk if mixture is too thick.
  3. Top and Serve!
