Salads are such an easy dinner to throw together. Here are 3 kid-approved versions!

Dressing
INGREDIENTS

  • ¼ cup EVOO
  • 2 TBSP balsamic vinegar
  • 2 tsp dijon mustard
  • 2 tsp brown sugar

DIRECTIONS

Chopped Salad
INGREDIENTS

  • Romaine lettuce
  • Chicken
  • Chickpeas
  • Carrots
  • Cucumber
  • Tomatoes
  • String cheese

Kale & Quinoa Salad
INGREDIENTS

  • Kale
  • Quinoa
  • Jicama
  • Shaven parmesan

  • Turkey
  • Mozzarella
  • Chickpeas
